Cake

  • 1/2 Cup coconut sugar
  • 3 Cups whole wheat flour
  • 1/2 Cup vegetable oil
  • 1 Tsp baking soda
  • 1 Tsp vanilla extract
  • 2 Tsp cocoa powder, unsweetened
  • 1 Tsp cinnamon
  • 1/4 Tsp nutmeg
  • 1 Cup plum jam
  • 1/2 Cup walnuts, chopped
  • 1 Cup almond milk

Topping

  • 1/3 Cup plum jam
  • 1/4 Cup walnuts

Instructions:

  1. Preheat oven to 350 F/ 180 C. Lightly grease and dust with flour a cake mold. Set aside.
  2. In a large bowl, add the flour, sugar, oil, baking soda, vanilla, cocoa powder, cinnamon, nutmeg and walnuts. Mix well.
  3. In a separate bowl, add plum jam and milk. Mix until well combined. Pour into the dry ingredients and mix again.
  4. Pour the mixture in the mold, spread and bake for about 50 minutes or until a wooden stick inserted in the middle comes out clean.
  5. Allow to cool completely in the mold, then transfer on a serving plate and top with plum jam and walnuts.
