Apricot and Almond Roll

This apricot and almond roll will satisfy your sugar cravings for sure! It’s extremely easy to make and you can form the mixture not only like a roll but like balls, bars, and other shapes. It’s one super delicious dessert that contains only healthy ingredients!

Ingredients

  • 150 g whole almonds
  • 200 g soft, dry apricots
  • 50 g desiccated coconut
  • 2 Tbsp almond butter
  • 1 Tsp almond extract
  • 1 Orange, zested
  • 2 Drops of orange oil
  • 1 Tbsp orange water

Instructions

  1. Line a sushi mat with plastic wrap and set aside.
  2. In a food processor, add the almonds and apricots and process until roughly chopped.
  3. Add the coconut and process again until a paste forms. Scrap down the sides of the blender as necessary.
  4. Add the remaining ingredients and blend again until everything is well combined.
  5. Transfer the mixture on the sushi mat and form a roll. Chill for at least an hour, slice and enjoy!
